I’ve talked about chicken wings before. Mostly about my nearly unconditional love of chicken wings. Even bad chicken wings – while still … you know, bad … can at least scratch the I want chicken wings itch.
These are not bad chicken wings. In fact, these are some of the very best most chicken-ey essence of chicken chicken wings I’ve ever made or for that matter ever had. They’re nearly fall apart tender, but still hold their shape and crips up perfectly. still juicy, just the right amount of salt, and flavored subtly with a hint of thyme, garlic, and pepper. You can choose to sauce them up - buffalo and blue cheese, sticky teriyaki, maybe sweet mustard, or hit them with a dry rub – smoked paprika, garlic powder, a touch of brown sugar, but they hold up all on their own.
